Ahi Tuna Poke


Yield: 12 Servings

Base

  • 12 each Wonton Skin .05 oz Cut
  • 1 oz Oil Blend Vegetable 90/EVO 10
  • 1 tbl Spice Sesame Seed Whole Black
  • 1 tbl Spice Sesame Seed Whole White

Tuna Mixture

  • 1/2 cup Sesame Orange Vinaigrette
  • 1 lb 3 oz Fish Tuna Ahi Boneless Skin, Diced
  • 1 oz Onion Green Scallion Trimmed, Sliced
  • 2 tbl Lime Juice
  • 1/4 oz Fresh Cilantro Leaves, Chopped
  • 1/4 tsp Ground Spice Cayenne Pepper
  • 1 oz Red Bell Pepper, Minced
  • 1 oz Pineapple, Peeled, Cored & Diced
  • 1 oz Radish, Peeled & Diced 

Garnish

  • 6 oz Seaweed Nori Green Dried Half Sheet

Method

Preheat conventional oven to 350° F, standard oven to 400° F.

On sheet pan, place wonton strips in single layer. Brush with oil. Sprinkle 1/3 of the strips with black sesame seed. Sprinkle 1/3 of the strips with white sesame seed. Bake 5-7 minutes until browned and let cool.

For One Serving:

In center of serving plate, place the following:

  • 2-oz spoodle tuna mixture (2 oz)

Garnish with the following: 

  • 3 wonton strips (1/2 oz) 
  • Small portion seaweed(1/2 oz)
